I've seen School Days...
But Matoko was already dead when she cut his head off, so.....
Also, I've yet to see a yandere in a anime or manga kill the one they love. Not to say there isn't one out there though.

Do the girls of Higurashi count as Yandere? I'm ashamed to admit I'm unfamiliar with the term...

If they start off lovey dovey and then snap and look cute covered in blood and holding a bloody knife.........then yes. They would be Yandere.
Esspecially if they have a psycotic smile.

Not exactly. Only Shion Sonozaki is considered a yandere, because she killed for the sake of Satoshi.
The other girls (except Rika) are yangire, since they snapped through other emotions that don't include love of any kind.
And to get even more in depth with the term:
Yandere is the mixture of the two words yanderu and deredere. Yanderu meaning sick and deredere meaning lovestruck. Basically, yandere "snap" for the sake of the ones they love.
Yangire is the mixture of the two words yanderu and gire. Yanderu meaning sick and gire meaning cut, slice or to snap. Now, yangire "snap" as an extreme result to some emotion other then love (Hatred, Loneliness, Anxiety, etc.).

I've read parasyte it's pretty good. Though of the Horror genre of manga my favorite would either be Biomeat or D.Grey-man~ I suppose I could list off all of my favorites but my list is insanely long... I'm a junky~ :3 Not exactly. Also were do you stand on the whole "Is Lelouche realy dead" debate I think he is still alive but in hidding.

I agree mildly on the Lelouch bit...
In terms of R+V, I am up to the current manga (maybe not this month's... need to check later) and I have seen some of the anime and was surprised that it was possible for it to be more fanservice... though the first ending of the anime was pretty good
